Malasada Recipe Review (Gluten Free and Vegan)

I found this recipe after I recently started baking gluten free and decided I wanted somewhat of a challenge.

After searching through multiple recipes and looking through comments and reviews I found this recipe from The Loopy Whisk. After making thedoghnutss I can without a doubt say they taste one to one like normal doughnuts and have actually made them again since then.

The main ingredients are:

  • Millet Flour

  • Sorghum Flour

  • Tapioca Flour

  • Psyllium Husk

  • Xanthan Gum

The instructions were very well put together and clear even stating how to substitute active dry yeast for instant and the alterations needed if you do substite (which I did). The instructions also give tips for potential confusing steps/stages in making the dough to make it even easier to troubleshoot any potential problems. Following the recipe is essentially the same as any other doughnut recipe minus the eggs normally used in doughnuts.

Unlike most doughnut doughs, because it is a vegan gluten free recipe it gets pretty sticky, so most people would want to add more flour to make it less so but if you stick through it the dough will become the perfect consistency after refrigeration. After being chilled, the process of frying is made way easier with a trick I learned from this recipe: she has you keep the doughnuts on little square sheets of parchment paper so you can easily place them in the oil without any spills or splashes of oil.

And after that I let them cool, covered them in some sugar and piped them with various jams and jellies, you really can’t go wrong with the flavor.

After my second time coming back to this recipe the texture and flavor of these doughnuts is amazing. The only gripes that I have with this recipe are that some of the flours can be hard to find and that the base recipe only makes 8 doughnuts!
