Waffles, Crepes and Pancakes Cookbook Review
From what I gathered the main purpose of htis book is to show how accessable crepes, waffles, and pancakes are and how many different variations there are of each type. She goes into detail on how the end product will turn out and a lot of the recipes even have other addins for a different flavor. Miller’s main theme really is all about accessability. Reading the book there’s a staple three ingredients: flour, eggs and milk. The books tone however isn’t the best as it seems pretty dry and a little two straight foward to me at least. However her main goal with this book is just to show how many different recipes there are between your standard buttermilk pancake, French crepe, and Belgian waffle.
To me there’s one major trait that stands out and it’s how simple yet sophisticated the recipes are. For example she says that “a true crepe should be thin enough to let the light shine through”, and how she breaks the mold of what can be considered breakfast food and dinner with her cheese and herb waffles which goes to her point of how these dishes shouldn’t be limmited to only breakfast. Another particular section of the book goes into how connected some recipes are like Swedish pancakes and Russian binis to their cultural roots.
Norma Miller’s Waffles, Crepes and Pancakes was written for a general audience and is actually in my opinion quite aproachable for anyone trying to learn about classic breakfast meals and how to expand on those three types. Waffles, Crepes and Pancakes is precise, simple and doesn’t leave that much to imagination, but that’s not a bad thing, she just shows how to turn almost any everyday ingredient into a great variety of flavorful food.
